Muffin Frittatas

Makes 12 serves

Ingredients
8 eggs
½ cup lactose free milk
½ cup diced up mushroom
1-2 chilies diced
Half cup spinach
1/3-cup low fat ricotta cheese
¼ Spanish onion
1-tablespoon parsley
Good pinch of black pepper
Good pinch of sea salt

Prepare

Whisk the eggs, milk, salt and pepper together well.
Lightly sauté the mushrooms, chili and Spanish onion.
Add ingredients into a bowl to combine.
Mix together well
Add mixture into a muffin tin separated evenly between the number of muffins you want to bake. Usually a 12 tin tray works well.
Bake on 160 degrees for 20-25 minutes or until risen slightly and cooked in the centre.

Let cool down.

Refrigerate what you don’t eat and take when required
