Lamb Meatballs with crunchy zucchini and sweet potato chips
Meatballs:
500gm Lean Lamb mince
1 egg
1 carrot
20gm fresh mint
20gm fresh oregano
½ cup dice onion
1 tablespoon diced shallots
1-2 fresh chili
Sauce:
2 tablespoons olive oil
3 cloves Garlic
Pinch of cinnamon
4 vine-ripened tomatoes
Sea salt
Black pepper
20gm Fresh mint
20gm Fresh oregano
10gm Fresh parsley
Cooking:
Mix meatball ingredients together to make meatballs
In pan pour in blended up sauce ingredients and place meatballs over sauce
Make sure meatballs are cooked through
Simmer with lid on low heat for 15 minutes
Zucchini and Sweet potato chips
1 Sliced Zucchini
1 Sliced large Sweet Potato
Cooking:
Placed sliced ingredients on pan lightly drizzled with macadamia oil
Sprinkle a little sea salt over them and cinnamon
Place in oven at 180 degrees for 15-20 minutes
