Ginger Bread Men
300g almond meal
2 tsp. ginger (ground)
1 1/2 tsp. cinnamon
1 tsp. nutmeg
½ tsp. baking powder (gluten free)
1/4 cup coconut oil melted
2 tbs. raw honey
1 tsp. 100% vanilla extract
1 egg
Turn on oven to 160 degrees Celsius.
Mix in a large bowl the almond meal, cinnamon, ginger, nutmeg, baking powder. Put to the side!
In a food processor whiz the egg, coconut oil, honey and vanilla extract until combined.
Add the dry ingredients to the food processor mix in with the wet ingredients and blend together to form a dough
Take out the mixture and knead a little to form a ball.
Now roll out the mixture into a thin roll on some baking paper and place this into the refrigerator for around 30-60 minutes.
Once that is done cut into desired shapes place carefully onto a lined baking tray
Place into the preheated oven and bake for 25 minutes or until golden brown.
Let them cool a little and enjoy these little treats
