Crusted Turkey Breast
Roasting a turkey breast means you’ll always have this Super Food on hand for snacks.
500gm turkey breast
1 medium lime, zest and juice
1 tablespoon fresh Basil
1 Table spoon Dijon mustard
1/2 cup chopped pine nuts
Freshly ground black pepper
Sea salt
Lemon for taste (optional)
Preheat the oven to 180 degrees. Place the turkey breast in a roasting pan. Whisk together the lime juice and zest, mustard, pine nuts, sea salt and black pepper. Pack the mixture on the top of the breast to create a crust, and roast until the turkey is heated through. Heat for 20 minutes.
