• 3 Large/extra large gourmet tomatoes cut in half, and seeded
  • 6 organic large eggs
  • 1/2 onion diced
  • ½ cup or extra lean bacon or ham off the bone
  • 2 button mushrooms diced
  • small hand full of shredded goats cheese to sprinkle on just before baking
  • 1 cup of cooked quinoa
  • sea salt and pepper to taste

Preheat oven to 180 degrees celcius. Place the 6 half on a baking dish. In a mixing bowl, lightly beat eggs and add a pinch of sea salt and pepper. Pour mixture to about ¾ of each halved tomato and sprinkle on some goats cheese.

Place the 6 half on a baking dish. Bake for about 20 minutes or until eggs are set. Enjoy!
